The sugars become alcohol, releasing that characteristic bouquet that intoxicates the atmosphere. It is a moment of transition, where the sweetness of the grape evolves towards the complexity of the flavors that will define the wine.

After the fermentation stage, aging stands as the masterpiece that shapes the final destiny of the wine, enhancing its fruity character and giving it structure and body. In this process, it is essential that the wood does not overshadow the essence of the fruit and the terroir, but rather acts as an elegant companion.

At this stage, the oenologists continuously taste the wines to finish their aging at the right time and thus ensure the greatest fruit expression and complexity in them.

Aging is a process full of mystery and patience, where art and science merge to give life to the most extraordinary wines, that is why it is essential. Taking as an example the creation of our most important wine— Paraíso, at Luigi Bosca we test more than 20 cooperages and 100 different types of barrels until we find the most refined and elegant aromatic profiles.

To achieve a harmonious balance, we lean towards second-use barrels, masterfully fusing wine and wood.

The great wines from wineries worldwide tend to be blended wines. For this reason, to make the final blend the winemaking team chooses barrels that stand out from the rest for their clarity, aromatic precision, intensity, and elegance. Returning to the example of our Paraíso wine, more than 10 tasting sessions were carried out until reaching the final result.

To obtain a wine of the highest quality it is known that the time dedicated to production is key. A wine of these characteristics needs at least 6 months of storage in the winery to gain complexity, character, harmony, and elegance, before going on the market.

In short, exploring the winery is to immerse yourself in the very essence of wine creation, which is the result of a meticulous, attentive and – fundamentally – extensive process that begins on the estate and ends when a person opens the bottle and pours a glass to taste the result of all this work and dedication.
